Goulash and Such

Last week I made this delicious baked penne with roasted vegetables, last night it was goulash, but what do these two things have in common? They make a ton! I've been on a roll of making a big recipe early on in the week and I'll tell you what, it makes my life easier.

Nate's enjoying taking his leftovers to work and I love that when my one year old and I are starving and on the brink of losing it from hunger (mostly me, not Landon), we can just pop our leftovers in the microwave and enjoy! If you have some delicious recipes you want to share, please send them my way :)

ps - For some reason the recipe for Bobby's Goulash on foodnetwork.com calls for 2 lbs of ground beef and 1 lb of ground turkey, but I just have to believe it's wrong (why I gave you a link to Paula's website instead). There is no way this recipe needs more than 2 lbs of meat in my eyes (no matter what combination you choose). Just thought I'd let you know :)

Meal in a Muffin

The last time we were in Colorado Nate's Mama introduced us to these delicious and healthy muffins called, "Meal in a Muffin." These things are jam-packed with good stuff, which is nice because after having one of these you are good to go (well, actually I accompanied mine with a yogurt, but I'm a big eater).

Ingredients:
I like that there is olive oil, wheat flour, and oats in these. Healthy substitutes.

There is also grated carrot and apple in them too. take a look:

The batter doesn't look like your typical muffin batter, but it tasted delish :)

And this is when I wish we had Smell-a-vision. These things smell and taste delicious!

Lisa, Charlie loved these muffins. Next time I'm up I'll bring some for Sofia to see if she likes them too!

I'm not sure what my obsession is with taking pictures of food, but I'm just rollin' with it here. Hey at least I am posting something, I guess.

Here's Sunday's Dinner in a before/after order, enjoy!

UPDATE: Per Emily's request, click on BBQ Chicken Pizza for the recipe. It's a simple one thanks to Sandra Lee and her semi-homemade meals :) It's great for those times you have leftover chicken lying around!
